Black-eyed beans in red sauce

A delicious recipe for black-eyed beans in red sauce from Chef Giorgos Tsoulis, which will surprise you!


For fava :

  • 250 gr Voion black-eyed beans
  • 1 onion, finely chopped
  • 1 sc. garlic, chopped
  • ½ leek, chopped
  • 1 tbsp. tomato paste
  • 400g tomato concache
  • 1 lt vegetable broth
  • 2 laurel leaves
  • Olive oil 
  • salt
  • pepper

Execution Method

  • Place a saucepan over medium heat, add water and fava beans, and bring to a boil. 
  • Bring to a boil, strain and set aside.
  • Heat the same pot over medium heat. As soon as it burns, add a little olive oil, the onion, the garlic, the leek and sauté them for 3 minutes, stirring with a wooden spoon at regular intervals.
  • Add the tomato paste and saute for 1 minute.
  • Add the concache tomato, stock, beans and bay leaves. Simmer for 35-40 minutes until the beans are soft and the sauce thickens.
  • Serve the roasted black-eyed beans hot.
