Cultivation areas: Central Macedonia, Epirus

Cultivation: In Central Macedonia and Epirus, at an altitude of 30 to over 600 meters, the particularly fertile soils, the passion and the knowledge of the producers contribute to the production of black-eyed beans of excellent quality.

Characteristics: Black-eyed Voion beans are small in size and beige in color with a black eye. They are rich in nutrients, taste and aroma, while they are ideal for salads.

RECIPE

BLACK EYED BEANS

INGREDIENTS 

  •  
  • 250g black-eyed beans 
  • 1 onion, finely chopped 
  • 1 glove chopped garlic
  • 1/2 leek, chopped 
  • 1 tbsp. tomato paste 
  • 400g tomato concache 
  • 1 lt vegetable broth 
  • 2 bay leaves 
  • Salt/ Pepper/ Olive oil 

INSTRUCTIONS

Place a deep pot on high heat, pour the beans in, fill with water until we cover the beans and boil them until they boil. Then, strain them and set them aside. Then, place the same pot on medium heat and let it burn. As soon as it burns, add a little olive oil, the onion, the garlic, the leek and sauté them for about 3 minutes, stirring with a wooden spoon at regular intervals. Then, add the tomato paste and sauté for 1 minute. Pour the rest of the ingredients into the pot along with the beans and simmer for 35-40 minutes until the beans soften and the sauce thickens.
