Black-eyed beans in red sauce

Ingredients
For fava :
- 250 gr Voion black-eyed beans
- 1 onion, finely chopped
- 1 sc. garlic, chopped
- ½ leek, chopped
- 1 tbsp. tomato paste
- 400g tomato concache
- 1 lt vegetable broth
- 2 laurel leaves
- Olive oil
- salt
- pepper
Execution Method
- Place a saucepan over medium heat, add water and fava beans, and bring to a boil.
- Bring to a boil, strain and set aside.
- Heat the same pot over medium heat. As soon as it burns, add a little olive oil, the onion, the garlic, the leek and sauté them for 3 minutes, stirring with a wooden spoon at regular intervals.
- Add the tomato paste and saute for 1 minute.
- Add the concache tomato, stock, beans and bay leaves. Simmer for 35-40 minutes until the beans are soft and the sauce thickens.
- Serve the roasted black-eyed beans hot.
