Octopus salad with black eyes beans


  • 2 cups of black eyed beans Voion boiled
  • 1 small (about 1 kg) octopus
  • 1/2 cup olive oil
  • 1/2 cup white dry wine
  • 1/2 cup red vinegar
  • 4-5 grains of pepper
  • 2 lettuce hearts
  • 1 small dry onion cut into rings
  • 4 sliced ​​pickles
  • 2-3 radishes for garnish
  • A little chopped parsley


We start making the octopus salad with black eyes, first simmering the octopus in a small saucepan with the oil, the pepper, the wine and the vinegar until it softens well. Leave it to cool and cut it into bites.

Put the lettuce, coarsely chopped, on a plate. Top with the beans, onion rings, sliced ​​radishes, cucumbers and octopus bites.

Sprinkle the salad with the parsley and pour the zucchini in which the octopus boiled.
