Colored giants beans with peppers in the oven


  • 400g colored giant beans Voion
  • 1 Florinis red pepper, in thin strips
  • 1 green pepper, in thin strips
  • 1 yellow or orange pepper, in thin strips
  • 1 onion, finely chopped
  • 3-4 cloves of melted garlic
  • 1 cup chopped tomatoes
  • 1 cup olive oil
  • 1 teaspoon sweet sugar
  • 1-2 hot peppers, dry
  • chopped parsley for garnish
  • Salt,pepper



Soak the beans overnight, strain them and boil them for 2 minutes in plenty of water. Drain and boil again in 1½ liter of fresh water until soft. Drain them again and save some of their broth.

Preheat the oven to 200oC. Saute the onion and garlic in olive oil until soft, and add the peppers, tomato, sugar, salt and pepper. Let simmer until the sauce sets, add the beans and peppers and stir.

Place the beans with their sauce in a fireproof dish and bake in the oven for 35-40 minutes, until a crust forms on top. Stir the beans during cooking. If necessary, add a little of the stock you kept, to keep the sauce a little thin. Serve the beans sprinkled with chopped parsley. Accompanied with cabbage salad or salted fish and village bread.
