RECIPE
RED LENTILS SOUP
INGREDIENTS
- 500g small lentils
- 1/2 cup olive oil
- 2 chopped onions
- 2 small leeks, finely chopped
- 2 cloves garlic, finely chopped
- 2 grated carrots
- 2 medium sized tomatoes chopped
- 2 spoons of chopped tomato paste
- 2 bay leaves
- Oregano
- Vinegar
- Cucumber oil for serving
- Salt / Pepper
INSTRUCTIONS
Boil with plenty of water for 5' and drain. Warm up 3-4 spoons of the total olive oil and saute it onion and leek for 3'. Add the garlic and carrot and mix. Add the pulp, lentils, tomatoes, bay leaves and hot water to cover the search. Cover andboil for about 25 minutes low temp. Season with salt and pepper at the end and add the remaining olive oil from the cup little by little, mixing with a wooden spoon on low temp to mash the lentils.
