Characteristics: It is a colorful combination of different varieties of legumes that we produce from our land. We choose the best legumes and mix them all together, combining their flavors, aromas and valuable nutrients. RECIPE

MIXED LEGUMES

INGREDIENTS 

  • 500g mixed legumes (4-5 dishes)
  • 1-2 dry onions 
  • 4-5 spring onions 
  • 2 leeks
  • 2 carrots 
  • 1/2 bunch of celery
  • 1/2 cup olive oil
  • Salt / Pepper

INSTRUCTIONS

Soak the legumes in the evening in warm water, having squeezed a lemon in it. Strain, add 2 liters of water and boil them over high heat for 40 minutes, skimming regularly. Cut our vegetables and add them to the pot. We are lowering the fire and continue boiling for another 30' or so. During the last 20 minutes, add the oil and salt and pepper and let it thicken. Serve on plates adding lemon juice and grated cardamom.
