Spicy lentils with shrimps and peppers
This easy food recipe will convince you that lentils are just as enjoyable to eat in the summer, not just as a cool salad!
Ingredients

- 200 gr. VOION καφέ φακές
- 2 bay leaves
- 30 ml extra virgin olive oil
- 2 Florina peppers, cut into medium pieces
- 1 orange bell pepper, cut into medium pieces
- 1 onion chopped + a little extra
- 2 cloves garlic, finely chopped
- 1 stick of celery, chopped
- 250 gr. grated tomato sauce
- ½ tsp. sweet cumin
- 1 tsp. smoked sweet paprika
- 1 tsp. sweet red sweet pepper
- ½ tsp. sweet dried basil
- ½ tsp. sweet dried thyme
- 50 gr. Orange juice
- 1 tsp. tablespoons balsamic vinegar
- 1 tsp. sweet cornflour
- 16 shrimp, cleaned
- ½ lime, the juice
- salt, freshly ground black pepper
Execution method
- Boil the lentils with one bay leaf over high heat until they soften. At the same time, in a saucepan, saute the peppers with olive oil for 4 minutes. Add the onion, garlic and celery and continue sauteing for another 2 minutes. Add the tomato juice, spices, herbs, salt and pepper.
- Strain the lentils and add them to the pot along with the orange juice and balsamic vinegar. Dissolve the cornflour in 150 ml of water and cook on medium heat for 5 minutes.
- Finally, add the shrimps, cook for 3-4 minutes and remove the pan from the heat. Serve the lentils with the shrimp with chopped onion and lime juice.
