Cultivation area: Western Macedonia

Cultivation: Our exceptional quality fava is produced in the region of Western Macedonia. The microclimate in the lakeside areas, the rich, fertile soil and the know-how of our producers offer an excellent product with rich, rich taste and wonderful aromas.

Characteristics: Voion fava beans are small to medium in size and yellow in color. It melts when it boils, giving a delicious, nutritious and velvety puree.

RECIPE

FAVA

INGREDIENTS 

  • 500 grams of fava beans
  • 1 dry onion
  • 1/2 cup of tea oil 
  • salt 
  • 1 medium onion sliced 
  • 1 tablespoon of capers 

INSTRUCTIONS

Soak the fava beans in water for 30 minutes and drain. We place them in a pot with a thick base and cover it with water. Once it boils, skim as needed. Stir gently and lower the heat.  Add the onion whole and simmer for 45 minutes without stirring. After it boils well, remove from the heat and with a wooden spoon stir continuously until it thickens or we pass it through the vegetable grinder. Add the oil and salt. In another container, saute the onions and capers in two tablespoons of oil for 3-4 minutes, until they become transparent. Serve the fava beans on a plate, garnishing it with the onion slices and capers.
