Chickpea salad with halloumi, arugula and green beans

A salad so rich and delicious that it is ideal as a light meal during the day.

Ingredients

  •  2 1⁄2 cups (300 g) green beans, blanched (for 1 – 2 minutes in boiling salted water)
  •  600 gr cheakpeas well rinsed and drained
  •  100 g arugula leaves
  •  250 g mixed cabbage salad (ready-made in a supermarket or shredded cabbage with carrots)
  •  3 tbsp olive oil
  •  1 tbsp balsamic vinegar
  •  4 small Arabic pies, cut into pieces
  •  120 g halloumi, thinly sliced
  •  salt and pepper

Execution Method

To make the chickpea salad with halloumi, arugula and green beans, we start by mixing the chickpeas, arugula, coleslaw, oil, vinegar and salt and pepper to taste in a bowl.

Spray a non-stick frying pan with a little oil (or brush it with a brush) and heat it over medium to high heat.

First, fry the pieces of Arabic pita for 2 minutes on each side, until crispy. Then, fry the slices of cheese for 2 minutes on each side, until golden brown.

Place the halloumi on top of the salad and serve with the Arabic pita.
