Fava bean soup
Try cooking fava beans in a different way by turning them into soup! Accompany it with vegetables and you will have the ultimate nutritious winter meal!
Ingredients
For fava :
- 200 gr. φάβα Voion
- 1 tbsp olive oil
- salt
- pepper
For the soup:
- 100 g water, boiling
- 1 fresh onion
- 1 carrot
- 2 tbsp parsley
- 2 tbsp sundried tomatoes
- 1 tbsp caper
- salt
- pepper
For serving:
- 2 tbsp croutons
Execution Method
For fava :
- Place a saucepan over medium heat, add water and fava beans, and bring to a boil.
- Drain the fava beans from the water and put them back in the pot.
- Add the olive oil and sauté for 2 minutes.
- Add water to cover the fava beans, sprinkle with salt and pepper, and boil until tender. (We may need to add water.)
- Remove the pot from the heat and beat with the blender until you get a smooth and velvety texture.
For the soup:
- Put the fava beans, boiling water, salt and pepper into a deep bowl, and mix well with a hand whisk until the fava beans are evenly diluted and not tight.
- Cut the spring onion into slices, the carrot into thin sticks and chop the parsley.
- Divide the sun-dried tomatoes, spring onion, carrot, parsley and capers into individual bowls.
- Add the fava bean soup and sprinkle with freshly ground pepper.
- Serve with croutons.
