Kalavrita bean soup with vanilla beans, lemon and oregano
Ingredients
Servings: 4
- 300 gr. beansVoion Vanilla beans)
- 1 dry onion, finely diced
- 3 tsp. tablespoon lemon juice (or as much lemon as we like)
- 1 tsp. sweet lemon zest
- 1/2 fl. tea fresh oregano, chopped, or 1½ tsp. tablespoon dried oregano, grated
- 80 ml olive oil
- 1/4 tsp. sweet hot bukovo powder or 1/2 small hot pepper, chopped (or as hot as we like)
- salt, freshly ground pepper
Procedure
- Put the beans, onion, zest and 200 ml of water in a deep saucepan and boil over medium heat for about 1 hour or until they are well softened.
- Pour a tablespoon of the beans into the bowl of the food processor we have and pulse them until they are pureed.
- Pour into the pot with the bean paste, add the oil, salt and pepper, boucovo and oregano and continue boiling for another 10 minutes, until the bean paste is mushy.
- Remove from the heat, pour over the lemon, mix gently and serve.
