RED BEANS
Cultivation areas: Kastoria, Florina, Western Macedonia.
Cultivation: Red beans are grown in the lakeside area of Kastoria and Prespa. The long tradition and the fertile soil contribute to the production of excellent quality beans.
Characteristics: It is known that beans can replace meat. They contain B, C, H and PP vitamins, calcium and potassium, copper, manganese, magnesium and zinc, iron, cobalt, nickel and aluminum, phosphorus and sodium.

RECIPE
RED BEAN TORTIGA
INGREDIENTS
- 1 tbsp. olive oil
- 1 onion, sliced
- 2 cloves garlic, finely chopped
- 1 tbsp cumin
- 1 tbsp paprika, smoked
- 400g boiled red beans
- 200g of tomato cavcas
- 100g grated cheddar
- ½ bunch cilantro, chopped
INSTRUCTIONS
Place a pan on medium to high heat and add 1 tbsp. olive oil. Add the sliced onion, the chopped garlic and saute for 2-3 minutes. Add the cumin and a pinch of paprika and continue mixing. Add the beans, the tomato and cook until the moisture is absorbed. Then add the cheese and coriander. Remove from the fire. We spread a tortilla on our workbench and place 1/4 of the mixture in the center, leaving a little space around the edges and roll it up. Cut in half and serve with chopped mint.
