GIANT BEANS

Cultivation areas: Florina, Kastoria, Western Macedonia.

Cultivation: The lakeside areas of Kastoria and Florina are famous both in the country and internationally for the production of giant bean and giant elephant. The long tradition, the taste and the knowledge of the producers, the composition of the soils, the water volumes of the springs of Aliakmonas but also the mild, semi-mountainous climate of the region contribute to the production of a unique product.

Characteristics: Giant beans and giant elephants of Western Macedonia are a delicate, high quality Greek variety that requires a short cooking time. The size of the beans is relatively large, the shape is nephroid and their color is white. Their rich and special taste makes them pleasant to eat even without sauce.

RECIPE

GIANTS IN THE OVEN

INGREDIENTS 

  • 400g giant beans 
  • 1 + 1/2 thinly sliced dry onion 
  • 4-5 cloves of sliced garlic 
  • 1 cup oil 
  • 1 stalk of celery, chopped 
  • 500g chopped tomatoes 
  • 1 tbsp sugar 
  • Salt / Pepper 
  • 1/2 bunch of parsley 

INSTRUCTIONS

From the previous night we soak the giant beans in plenty of water. The next day, rinse them well and boil them until soft, skimming them regularly, for about 40'. Drain them and put them in a pan. Heat half the oil in a deep frying pan and over medium heat, wilt the garlic, onion and celery for 10'. They should not take color but wither. Add the sugar, tomatoes, parsley and salt and pepper. Boil for 10' and pour over the giants. Add the rest of the oil as well as 1 teacup of water. Bake in ovens, in a preheated oven at approximately 200 °C for 45'.
