Tahini Pie
With a fluffy yet sturdy dough and a sweet filling of tahini, sugar and cinnamon, Cypriot tahini pie is indescribably delicious.

Ingredients
Servings: 10-14 pieces
For the filling
- 720g tahini
- 3 cups sugar
- 3 tsp ground cinnamon
For the dough
- 750g country flour (yellow, for bread)
- 300g self-raising flour
- 7-8g dry yeast (1 packet)
- 1 tsp salt
- 200g sugar
- 3 tsp ground cinnamon
- 1/3 tsp mastic, finely ground
- 1/3 tsp mahleb, finely ground
- 700-750 ml water
Procedure
Dough
- For the tahini pie dough, in a large bowl or the bowl of a mixer, combine the two types of flour, salt, sugar, yeast, cinnamon, mastic, and mahleb.
- Gradually add the water, kneading until the dough is soft (but not too firm).
- While kneading, cut the dough into pieces and knead again to better combine the ingredients and
flavors. - Cover with a towel and let it rest for about 30 minutes to rise.
Filling - 1. In a mixer, beat all the filling ingredients for 2-3 minutes until the tahini lightens a little in color.
- 2. Set aside a little of the filling to brush the pies before baking.
Tahini Pies - Divide the dough into 10-14 pieces and shape them into balls.
- Cover with a cotton towel to prevent the dough from drying out.
- Without flouring the surface, roll each dough ball into a rectangular sheet (about 30 x 12 cm).
- Place 2 tablespoons of filling in the center of each sheet and spread it out, leaving a 1 cm border around the edges.
- Stretch the dough as much as possible without breaking it or spilling the filling.
- Fold the sheet in half and roll it up, pulling gently to form a long strip.
- Twist one end of the roll into a spiral (snail shape) until the middle.
- Twist the other end into a spiral and shape the final piece into a "s" shape.
- Place one spiral on top of the other and gently press with your hand to make them stick together and flatten.
- Repeat the process for the entire dough.
- Cover a baking tray with parchment paper and arrange the pies, leaving space between them.
- 12. Cover with a towel and leave in a warm place for another 30 minutes to rise.
- Preheat the oven to 160°C.
- Uncover the tahini pies, brush them lightly with the reserved filling, and bake for about 30 minutes, until golden brown.
