Kalavrita bean soup with vanilla beans, lemon and oregano


Servings: 4

  •  300 gr. beansVoion Vanilla beans)
  •  1 dry onion, finely diced
  •  3 tsp. tablespoon lemon juice (or as much lemon as we like)
  •  1 tsp. sweet lemon zest
  •  1/2 fl. tea fresh oregano, chopped, or 1½ tsp. tablespoon dried oregano, grated
  •  80 ml olive oil
  •  1/4 tsp. sweet hot bukovo powder or 1/2 small hot pepper, chopped (or as hot as we like)
  •  salt, freshly ground pepper


  1. Put the beans, onion, zest and 200 ml of water in a deep saucepan and boil over medium heat for about 1 hour or until they are well softened.
  2. Pour a tablespoon of the beans into the bowl of the food processor we have and pulse them until they are pureed.
  3. Pour into the pot with the bean paste, add the oil, salt and pepper, boucovo and oregano and continue boiling for another 10 minutes, until the bean paste is mushy.
  4. Remove from the heat, pour over the lemon, mix gently and serve.
