WHEAT KORKOTO
What it is: The cork is peeled and broken durum wheat. In practice it is like oatmeal, except that the oatmeal is cooked. Cork is used as a raw material mainly in Pontian cuisine.
Cork has all the benefits of wheat, which means it is rich in fiber, B vitamins, vitamin E, but also Potassium, Phosphorus, Iron, Magnesium and Zinc and contributes to good health.

RECIPE
KORKOTO SORVAS
- 1 glass of korkoto
- 1+1/2 liters of water
- 500g of traditional cow's yogurt
- 1 tbsp coarse salt
- 1 tbsp fresh mint or 1 tbsp. desiccated
INSTRUCTIONS
Put the water in a pot, as soon as it boils, add the korkoto. Lower the temperature and simmer until soft and mushy. If necessary, add a little more boiled water. At the end, add the salt and remove from the heat. Put the yogurt in a bowl and slowly add juice from the korkoto, mix hard and fast so it doesn't break (as we do egg lemon). Stir until the mixture is smooth and reaches the temperature of the corncote. Add the yogurt mixture to the pot and stir. Melt the butter in a saucepan or frying pan and add the mint. Pour the butter over our soup and serve.
