MEDIUM BEANS

Cultivation areas: Florina, Western Macedonia.

Cultivation: The mild summer in Western Macedonia with the low night temperatures and the cultivation in fertile soils contribute to the production of superior quality medium beans. The cultivation of medium beans takes only three months and is the first beans harvested in Western Macedonia, to cook delicious bean soup, the national dish of the country.

Characteristics: The beans are small, oval in shape and white. It is a variety well adapted to the microclimate conditions of the area, with the result that the beans are easy to boil, tasty, and nutritious. They have a buttery texture, rich aroma and thin skin. Preparing for cooking is easy and is ideal for soups and salads.

The Voion products are produced exclusively by small producers who cultivate the purest products with good agricultural practices.

RECIPE

TRADITIONAL BEANS SOUP

INGREDIENTS 

  • 500g dry beans
  • 3 carrots chopped  in washers 
  • 2 chopped onions 
  • 400g canned tomatoes 
  • 1/2 cup oil 
  • 3 sprigs of celery
  • Salt / Pepper 
  • 1 hot pepper optional 

INSTRUCTIONS

We soak the beans from the previous night. The next day, wash them and boil them on low heat until they soften (about 1 hour). Drain them and rinse the pot. Heat the oil and sauté the onions and carrots for 3 minutes, add the tomatoes, salt, pepper and celery. As soon as the sauce boils, add the beans and a liter of warm wine. Continue boiling until the beans are mushy. At the end, remove the hot pepper and serve the bean soup hot.
