Cultivation: In Western Macedonia, at an altitude of over 600 meters, Voion borlotti beans are produced. The particularly fertile soils, the abundant waters, the ideal climatic conditions but also the taste and the knowledge of the producers contribute to the production of a product of exceptional quality and taste.
Characteristics: Borlotti beans are especially known for their colorful spots, which disappear during cooking. It is a very tasty variety of legumes with beneficial properties for the human body. Their name is due to their external appearance, since when they are green they look similar in color to the red mullet fish. There are many ways to cook it, such as oily, with meat or in a colorful, fresh salad.

RECIPE
BORLOTTI BEANS
INGREDIENTS
- 400g borlotti beans
- 1-2 medium dry onions
- 1/2 cup olive oil
- 2 cloves garlic
- 300 – 400g grated tomato or half a can (200g) of tomato paste and 1 spoonful of paste
- 5-6 sprigs of parsley
- Salt / Pepper
- Optional: 1 hot pepper or hot red pepper or 2 small fresh peppers (not hot). We can also add 2 medium carrots.
INSTRUCTIONS
We put the beans in the water in the evening (we can avoid if we boil them in a slow cooker). Next day we put them to boil with cold water and as soon as they boil, strain them and soak them in cold water. Boil until soft. Fry the onions and add the beans. Add some of the boiled water, tomato, garlic, pepper, parsley, chopped carrots thinly sliced, salt and pepper. Simmer, adding whenever necessary water from what the beans were boiled. When they are mushy, remove from the eye.
