It is named after the town of Arborio in the Po Valley, located in the mainland of Piedmont in Italy.<\/p>\n<p><strong>Characteristics:<\/strong> Arborio rice is high in amylopectin, a starch found in rice. Because it is less ground than regular long grain rice, arborio retains more of its natural starch content.
