{"id":8526,"date":"2025-03-10T12:40:05","date_gmt":"2025-03-10T09:40:05","guid":{"rendered":"https:\/\/voion.gr\/?p=8526"},"modified":"2025-03-10T12:40:55","modified_gmt":"2025-03-10T09:40:55","slug":"%cf%84%ce%b1%cf%87%ce%b9%ce%bd%cf%8c%cf%80%ce%b9%cf%84%ce%b1","status":"publish","type":"post","link":"https:\/\/voion.gr\/en\/%cf%84%ce%b1%cf%87%ce%b9%ce%bd%cf%8c%cf%80%ce%b9%cf%84%ce%b1\/","title":{"rendered":"Tahini Pie"},"content":{"rendered":"<p>With a fluffy yet sturdy dough and a sweet filling of tahini, sugar and cinnamon, Cypriot tahini pie is indescribably delicious.<\/p><p>Preparation time: 20 minutes<br>Baking time: 30 minutes<br>Resting time: 1 hour<br>Total time: 1 hour and 50 minutes<\/p><p><strong>Ingredients<\/strong><\/p><p>Servings: 10-14 pieces<\/p><p><strong>For the filling<\/strong><\/p><ul class=\"wp-block-list\"><li>720g tahini<\/li>\n\n<li>3 cups sugar<\/li>\n\n<li>3 tsp ground cinnamon<\/li><\/ul><p><strong>For the dough<\/strong><\/p><ul class=\"wp-block-list\"><li>750g country flour (yellow, for bread)<\/li>\n\n<li>300g self-raising flour<\/li>\n\n<li>7-8g dry yeast (1 packet)<\/li>\n\n<li>1 tsp salt<\/li>\n\n<li>200g sugar<\/li>\n\n<li>3 tsp ground cinnamon<\/li>\n\n<li>1\/3 tsp mastic, finely ground<\/li>\n\n<li>1\/3 tsp mahleb, finely ground<\/li>\n\n<li>700-750 ml water<\/li><\/ul><p><strong>Procedure<\/strong><\/p><p><strong>Dough<\/strong><\/p><ol class=\"wp-block-list\"><li>For the tahini pie dough, in a large bowl or the bowl of a mixer, combine the two types of flour, salt, sugar, yeast, cinnamon, mastic, and mahleb.<\/li>\n\n<li>Gradually add the water, kneading until the dough is soft (but not too firm).<\/li>\n\n<li>While kneading, cut the dough into pieces and knead again to better combine the ingredients and<br>flavors.<\/li>\n\n<li>Cover with a towel and let it rest for about 30 minutes to rise.<br><br><strong>Filling<br><\/strong><\/li>\n\n<li>1. In a mixer, beat all the filling ingredients for 2-3 minutes until the tahini lightens a little in color.<\/li>\n\n<li>2. Set aside a little of the filling to brush the pies before baking.<br><br><strong>Tahini Pies<\/strong><br><\/li>\n\n<li>Divide the dough into 10-14 pieces and shape them into balls.<\/li>\n\n<li>Cover with a cotton towel to prevent the dough from drying out.<\/li>\n\n<li>Without flouring the surface, roll each dough ball into a rectangular sheet (about 30 x 12 cm).<\/li>\n\n<li>Place 2 tablespoons of filling in the center of each sheet and spread it out, leaving a 1 cm border around the edges.<\/li>\n\n<li>Stretch the dough as much as possible without breaking it or spilling the filling.<\/li>\n\n<li>Fold the sheet in half and roll it up, pulling gently to form a long strip.<\/li>\n\n<li>Twist one end of the roll into a spiral (snail shape) until the middle.<\/li>\n\n<li>Twist the other end into a spiral and shape the final piece into a \"s\" shape.<\/li>\n\n<li>Place one spiral on top of the other and gently press with your hand to make them stick together and flatten.<\/li>\n\n<li>Repeat the process for the entire dough.<\/li>\n\n<li>Cover a baking tray with parchment paper and arrange the pies, leaving space between them.<\/li>\n\n<li>12.
