{"id":1985,"date":"2018-04-29T08:46:06","date_gmt":"2018-04-29T05:46:06","guid":{"rendered":"http:\/\/www.voion.gr\/?p=1985"},"modified":"2023-12-07T12:51:27","modified_gmt":"2023-12-07T09:51:27","slug":"mayromatika-me-ntomatinia-kai-spanaki-stin-katsarola","status":"publish","type":"post","link":"https:\/\/voion.gr\/en\/mayromatika-me-ntomatinia-kai-spanaki-stin-katsarola\/","title":{"rendered":"Black eyes with cherry tomatoes and spinach in the pot"},"content":{"rendered":"<h4>Ingredients<\/h4>\n<ul>\n<li>250 gr. black eyed beans\u00a0<a href=\"http:\/\/voion.gr\/en\/product\/%cf%86%ce%b1%cf%83%cf%8c%ce%bb%ce%b9%ce%b1-%ce%bc%ce%b1%cf%85%cf%81%ce%bf%ce%bc%ce%ac%cf%84%ce%b9%ce%ba%ce%b1\/\">Voion<\/a><\/li>\n<li>1 kg of spinach, washed and coarsely chopped (either we buy about 1\u00bd kg, because during cleaning it has pulp, or we get it ready, cleaned and washed, in a bag in the refrigerators of the supermarkets)<\/li>\n<li>the white and tender green part of 1 leek, cut into thin slices<\/li>\n<li>the white and tender green part of 2 - 3 spring onions, in slices, or 1 onion, in small frames<\/li>\n<li>1 large carrot, grated<\/li>\n<li>1 soup spoon tomato paste<\/li>\n<li>20 cherry tomatoes, cut in half<\/li>\n<li>100 ml olive oil<\/li>\n<li>1\/2 bunch dill (without the thick stalks), finely chopped<\/li>\n<li>40 ml lemon juice<\/li>\n<li>salt, freshly ground pepper<\/li>\n<\/ul>\n<h2 class=\"item-title\"><\/h2>\n<h4>Procedure<\/h4>\n<ol>\n<li>In a large saucepan, heat the olive oil over medium heat and saut\u00e9 the leeks with the onions and carrot for 2-3 minutes, until soft.<\/li>\n<li>Add the black eyes and continue saut\u00e9ing for 1-2 minutes. Add the pulp and the cherry tomatoes. Season with salt and pepper and mix well.<\/li>\n<li>Pour hot water until the beans are covered, and cook over medium heat for about 20 minutes.<\/li>\n<li>Add the spinach and stir for about 1-2 minutes, until it withers.
